Weekend Coffee Share -2nd December, 2018.

Welcome Back to Another Weekend Coffee Share!

While some weeks you’re lucky to get a tea or coffee at Beyond the Flow let alone something to eat, this week you’re being spoiled. I can offer you a slice of virtual Hazelnut and Raspberry Gateau, which I made for the Church Christmas Party. These cake experiments of mine don’t always work out and can be rather catastrophic. So, when this cake looked like something straight out of a bakery, I was so chuffed. I even managed to position the raspberries neatly around the edge and created a hazelnut praline pyramid on top. That was actually quite simple and yet it looked very dramatic and so clever. It was more a situation of good luck, patience and a few trips back to the supermarket as the recipe evolved but that hasn’t stopped me for feeling particularly chuffed and excited that I could get something right.

I think I speak for many of us when I say that I’m often just trying to stay out of trouble most days. A few weeks ago, I had a really bad run with the car and really felt I should stop driving or at least cut back. I scraped the car badly in the supermarket car park and then drove into a concrete lane divider in the multi-storey car park at the local hospital when I was taking our son to Emergency. I cracked the radiator and goodness knows what else. I felt really bad about it for a few days. However, as I started speaking to various friends, it turned out that the turning circle was very tight and they’d struggled to get around and weren’t at all surprised. That was reassuring. Anyway, the insurance company ended up writing off the car and we’ve gone out and bought an older Subaru Forrester at auction to get by and will get another good car once the dust has settled. However, we like the Forester so we might get a more recent model. We’ll just see.

Last Friday, I went down to Sydney for a medical appointment and in typical fashion disappeared on one of my excursions afterwards. This time I headed over to Elizabeth Bay on Sydney Harbour, which was quite a way from the hospital and the opposite direction to home. The appointment was late in the day and with all the end of year stuff going on, I knew going there wasn’t the most sensible thing to do. That I should be conserving energy and being a good little Vegemite. However, sometimes I get sick of being good. Being that Mum person who is straight-laced and driving kids from A to B and is supposed to have everything sorted. Stick to the routine and all that. Sometimes I want to go back to being a backpacker and going off the grid exploring all sorts of nooks and crannies without having to rush home to pick anyone up. I just want to escape all those time pressures and having to be somewhere and just be nowhere for a bit. Get off the leash.

Anyway, a few weeks ago, I found out that my grandparents used to have a flat at Caversham Court in Elizabeth Bay and I wanted to go and check it out. Walk the streets they’d walked. There’s something quite amazing about trying to squeeze into someone else’s shoes and try to see the world through their eyes. Walk along the very same streets they walked, and feel a sense of timeless magic which knows no bounds. Just around the corner from their flat, I came across a park on the waterfront with a few seats looking out across the harbour. I’m not sure bout whether you’re familiar with that concept of an empty chair representing an absent friend, but I photographed two of the empty park benches side-by-side and thought of them. Clearly, I didn’t know them as newlyweds. However, young love hasn’t changed and I could sense the love in the air. More than that. I could feel them sitting there in the park behind me enjoying a picnic and a glass of wine beside the harbour. How I wish it were true!

Thinking about other posts I’ve done this week, for Thursday Doors I wrote about Building 30, Royal North Shore Hospital. I came across Building 30 on the way to my medical appointment on Friday. It’s one of the older Federation-style buildings on the hospital grounds and it must be being renovated because it had these fabric sheets with fake Federation style windows printed on the sign which hid all the scaffolding and building site paraphernalia. I was quite intrigued by it all and could help wondering why and how much it cost, but took photos of it in the meantime. It was quite interesting and I did managed to find an old dilapidated door in there to keep our host happy.

This coming week is concert week at our place. My daughter’s dance concert is on Saturday. It’s a big deal. She’s in dance team and with something like eight costume changes, there’a a lot to organize and she could use her own Personal Assistant. They each have their own portable wardrobe, and look like the Queen of Sheba although with so many quick costume changes, they make good sense. She was talking to me tonight about all the steps she has to remember, and I was blown away. Unlike music, dance doesn’t seem to have a written score. The opening number is the highlight of the show and is every bit as challenging and dazzling as you’d expect. I saw a sneak preview at the recent nursing home concert, but can’t wait to see the final thing on stage and under lights… as well as her other dances. Indeed, I love watching the entire show. It’s brilliant and it’s amazing to see the students’ progression each year and how far they’ve come. Dance is much more complex and mentally challenging, than I’d ever realized  and then there’s also the physical side of things which completely blows me away, especially considering my own physical limitations.

However, my daughter isn’t the only concert performer this week. Next Sunday, yours truly will be taking to the stage and playing a duet of Danny Boy on my violin with my teacher at the end of year concert. These concerts are held outside on a pecan orchard, which makes for a very relaxing, lush green environment. I’ve ramped up my practice for the last month and it’s coming along well. So, fingers crossed it’s going to come off well on the day. That’s always a bit of an unknown. I bit like making a cake for a special occasion, you can put in all the same ingredients and one day it works out perfectly and another time disaster beckons at every turn. At least, the violin has a dubious reputation and is well known for squeaking and making horrible noises. So, if my violin suddenly emits an ear-piercing screech right in the middle of Danny Boy just when the emotions are rising and the tears are starting to swell, my audience will more than likely let me off. It was the violin’s fault, and well beyond my control.

Lastly, while I was catching multiple trains halfway across the universe on Friday, I was reading Kathy Lette’s The Boy Who Fell To Earth. This is about a Mum who gets arrested for trying to procure a prostitute for her son with Autism, so he can lose his virginity before his 21st birthday. I’m still not quite sure what to make of the book or Lette’s excessive use of similes and puns, but I’m still reading it. It also seems a bit far fetched, which you might say goes with a standup comedy approach to writing a novel . However, for me, it still needs to be credible and I’m not quite sure this is. That is despite Lette writing from personal experience. Her 26 year old son Julian  was diagnosed with Autism when he was three. You might like to read a bit more about it in this review by the Australian Women’s Weekly Here

Anyway, the night is no longer young and indeed the clock has accelerated past midnight and taken me with it. Another week begins in just a few short hours, and like Cinderella I’ll be back to the real world and needing to look responsible.  I guess that’s what makeup and a good choice of lipstick are good for.

Weekend Coffee Share… 26th November, 2018.

Welcome to Another Weekend Coffee Share!

Well, before I get much further, I should tell you it was much husband’s birthday earlier in the week and we had a wonderful lunch out together at a restaurant across from our local beach. The weather was stunning and we had such a relaxing time. Well, it would’ve been more relaxing if a group of young whippersnappers weren’t discussing their investment strategies and how much money you should leave in the pot. I was very tempted to ask them to ****up and tell them that some people actually like to enjoy life. Go out for lunch to get away from all of that. I can guarantee that when I was their age, I wasn’t discussing investment strategies. However, eventually the bright sun forced them inside and out of earshot.

By the way, my apologies on the food and beverage front today. About all I can offer you is tea, coffee, water and some great music. I’m sitting out at my desk listening to Ian Cooper: Hard Axe to Follow featuring  violinist Ian Cooper, guitarist Tommy Emmanuel and Maestro Tommy Tycho. This where my story gets rather humbling, which is hardly surprising for someone who bills themselves as: “The Closet Violinist”. Even if you’re shy, if you have a modicum of talent, someone eventually drags you out of the closet into some kind of public arena. Wants to bless the world with your magic. Not so for a poor closet player. They either leave the door, shut or slam it in your face. People can be so insensitive!!

Anyway, as I said, I’m listening to Ian Cooper Ian Cooper and this piece of music is vaguely familiar and moving out of the background, until I’m wracking my brain trying to work out what it is. Indeed, I’m even glaring at the back of the cover, and still not getting any wiser. Clearly, I should’ve finished my cup of tea before I began this simple, yet apparently ambitious task. The peanut butter sandwich clearly wasn’t enough either. As it turns out, much to my embarrassment, they were playing a reinvention of Dvořák’s Humoresque . I say much to my embarrassment, because I’ve been learning this piece for over the last three months. I guess it’s a bit like when you’re introduce two close friends, and have a temporary memory lapse and can’t remember their name.

Meanwhile, the Closet Violinist is hard at work. For those of you with even a toe in the performing arts, you’ll know that the end of the year is concert season. So, I’ll actually be coming out of the closet and will be playing a duet of Danny Boy with my teacher at the end of year concert. Last week, she gave me a big tick of approval and said she’d be stoked if I played like that at the concert. Yet, I’m still working on it.

Perhaps, I shouldn’t be surprised that practicing more, produces more practice and consequent improvement. It’s so exciting to be polishing off a handful of pieces and I’ll soon be moving from the Suzuki Book 3 onto Book 4, where I start learning concertos. It struck me that even if I’m only learning concertos, that I can’t keep saying that I can’t play the violin anymore. We Aussies can be an understated bunch. So, I think I’d now describe my playing as “could be better, could be worse”. How’s that for confidence and self-esteem? To be honest, I’m just grateful when my violin doesn’t squeak or do its infamous cockatoo screech. While the violin can be such an incredibly beautiful songbird (even when I play it), it can also be so cantankerous. Yet, I must say I was encouraged recently when a newfound friend, who is an incredibly talented musician, said all musicians wrestle with their instruments. By the way, as you may be aware there are definite parallels between mastering an instrument and conducting a passionate love affair…the love, the intensity, arguments, silence and all too often a parting of ways possibly after a physical break of some description.

This weekend, however, it wasn’t my turn to shine. My daughter performed with the Dancin Mates Dance Team at a local nursing home. They did the opening number from the upcoming annual concert and they each performed their solos. It’s been awhile since my grandparents were living in nursing homes now and this is the only time I visit one these days. I’m really pleased my daughter is involved with these performances, as it’s important to try and cheer up people who might be doing it tough and bring a ray of sunshine indoors to people who may not get out all that often. Even just being themselves and wearing their dazzling costumes would be enough to brighten someone’s day but then to see them dance, is utterly magical. Some of these young people are in the process of transitioning into the professional dance world and so they weren’t just seeing people with nowhere else to go. My parents also came up to watch which was very special for us.

There have also been some challenging times over the last few weeks. My health is doing well and my endoscopy and colonoscopy haven’t picked up anything too nasty. However, I have a friend battling advanced Motor Neurone Disease and things with her have been really difficult lately. There were a couple of days where I was so angry about it and ended up finding solace on my violin, which isn’t something I’ve consciously done before. After all, as a beginner, all that screeching is hardly relaxing. I have also been listening to some violin music and that’s been very cathartic as well. I think the tone of the violin, especially when it hits the high notes, really releases the anguished or troubled cry of the soul. Any thoughts?

I did a bit of baking through the week. It started out with attempting to make a birthday cake for my husband using GF flour. I don’t know what happened because what went into the cake doesn’t resemble the recipe and then the cake didn’t rise. While I was waiting to decide its fate, the dog decided to help herself and Geoff heard the tin crash on the floor and half the cake was gone by the time he got there. Golly. These dogs are quick. Fortunately, there had been two layers. By this stage, the logical thing was to throw it out. However, I must believe in raising the dead after all. I broke the cake up and decided to do a variation of a family dessert…Chocolate In-Betweens. In the original you have chocolate mouse in between sponge fingers which have been dashed with sherry. In this version, there was chocolate cake smothered in cream, splashed with Frangelico and then covered in the chocolate mouse filling from the original cake recipe. The patient was removed to the fridge to rest. Much to our surprise, the result was incredibly scrumptious and will be the beginning of a new thing.

Weekend Coffee Share 26th February, 2017.

Welcome to Another Weekend Coffee Share!

Quite frankly, I think the dog’s got the right idea. He’s lying on the floor beside me with his paws twitching in the air, evidently having a wonderful dream. I spoilt his other half yesterday. I spotted a very posh dog leash at the charity shop…a string of pearls with gold bling. Lady would look quite the part if she wasn’t such a scruffian and I hope she doesn’t roll around in dead stench while strutting her stuff.

We’ve had a big week.

Friday, as my daughter’s birthday. While we’ve put off her party until after “the test”, we still had festivities. It’s customary here for kids to take cupcakes in for their birthdays for the class. My daughter had found these uber-colourful rainbow cookies called “Unicorn Poop” on YouTube.  While seriously aghast at the “intense” colours and all that entailed, I was also concerned with her trying to make an American recipe for the first time for a special occasion. My mother hasn’t given me heaps of baking advice that I’ve taken to heart. However, she says you never make something for the first time for something special. I thought this advice went double when the recipe was in “American” and we had to translate the lingo and measurements. We opted instead for an English variation. With the end product looking like very pretty rocks, I not so subtly suggested she also makes cupcakes. Turned out that the biscuits weren’t as hard as they looked. She meticulously and artistically iced and decorated them and had a hit.

Happy Birthday, Miss!

Last night, my parents came over and we all went out for dinner. It was the first time my Mum’s come over since her back went out last year and it was so good to see them up here. While we went out for dinner, we came back here for rainbow birthday cake and we shared some of our Tasmanian treats with them. That was so much fun and very yum!

Quite aside from my daughter’s birthday, much of my head space and time has been taken up with getting her prepared for the selective schools’ test, which will be held 9th March…only about 10 days away. Our daughter is in a selective primary school class and just from the perspective of staying with her friends, the test is at the very least an issue. I don’t believe in hot-housing kids and yet there’s that pressure, that anxiety, that not knowing. Believe me. It’s tempting to get all caught up in the panic/fear and throw all “distractions” aside and treat my daughter as a widget passing along an assembly line. So what about nurturing and developing the whole child?

I am hoping that we’ve trod the middle ground  and have done enough while staying somewhat sane. She’s been doing a bit of tutoring and some work at home but has still kept up with her dance and violin.

Strangely, the rest of the known world is not revolving around “the test”. Our State MP developed serious cancer and had to resign. This means we have a local by-election. I have to admit that I wasn’t enthralled with all the hoopla that entails, especially as we’re a marginal seat and experience what could best be described as an “Election Blitz”. You can share my shot at humour  here: Oh no! Not Another Election!

You know how hard it can be keeping the blog up with real life. Well, before writing about my frustrations with the political process, I’d actually found out that a friend and much valued role model, Liesl Tesch, is running as the local Labor Party candidate. That was quite a surprise and quite a thrill. Liesl is a Paralympic gold medalist and like me, juggles disability with movement and she showed me how you can use equipment as an enabler. Liesl teaches at our local High School and rides her bicycle to work but uses a wheelchair during the day and then cycles home. I first met her as the guest speaker at the International Women’s Day March and she was wheeling along the main street in her chair. However, when I next met her talking to our scout troop, she was standing and on her feet. That was good for me to see, because there are times when I could use a wheelchair to boost my accessibility and yet I’ve only done it once attending the Sydney Opera House.

I attended Liesl’s campaign launch on Friday morning. That was an eye-opener as it was more of a press conference. It felt quite strange seeing the political juggernaut back in town and I’ll leave it at that.

Meanwhile, I’m still following up from our trip to Tasmania. I don’t know whether I mentioned that I’ve told Geoff that he’s related to all of North Tasmania. He disagreed with me and it’s become a bit of a running joke. However, I’ve worked out that James Newton the convict I’ve been researching, had around 30 grandchildren and I’ve recognized quite a few names from the trip. It seems the degrees of separation get pretty tight down there historically speaking. Yet, many descendants have moved to the Mainland. So, it seems they could be infiltrating our ranks.

Well, on that note, I’ll head off.

I just realized that I’ve been a dreadful host and haven’t offered you anything to eat or drink and haven’t even asked how you’ve been or what you’ve been up to. My sincere apologies and I really didn’t mean to yawn at you then either. It looks like I’ve become so chilled today, that I’ve almost passed out.

Christmas Cake Dogastrophy

If you look into those irresistible, chocolate brown eyes, you would never suspect that cute as a button dog could be capable of such wickedness.

The Christmas Cake.

That she could sit there licking her lips seemingly asking for more when she’s all but devoured our homemade Christmas Cake. That’s right. The very same Christmas Cake I made using my mother’s recipe, which has been part of my Christmas every year for at least 45 years or thereabouts (I doubt a 5 month old baby would’ve eaten Christmas Cake, but you never know.)

The world was very different then and so many of our family traditions have disappeared. So, this Christmas Cake is special. Of course, it doesn’t replace the true meaning of Christmas but it was made with love and the dog gutsed all that love all by herself.

Well, fortunately, she didn’t get all the cake. Thanks to my Dad’s rather peculiar aversion to cinnamon, I’d made a tray of mini Christmas Cakes for him, which I’d safely sealed away in a plastic box.So, it looks like Dad will be sharing.

As for Lady, she showed absolutely no remorse and has shot up to the very top of Santa’s Naughty List.

So, there’ll be no pressies for her…except a potentially nasty tummy ache!

Do you have any Christmas disasters to report? After all, as much as we strive towards a perfect Christmas, most of us are only human and we’re left to blame our mistakes on the dog.

Rainbow Crumbs with Dog Hair & Chocolate Storm.

You try having a foot spa with a cup of tea and slice of cake without the famished, fur-shedding Border Collie all but eating the cake off your plate. You can see from the photo that Bilbo’s left significant DNA evidence behind. Yes, he was most definitely at the scene of the crime. Except, I beat him to it!

Nigella’s Nutella Cake with Rowena’s Raspberry Cream

After a very extensive preamble, here is my revised version of Nigella’s Nutella Cake. The ingredients are the same but I’ve added more detail to the directions after I encountered difficulties.

If you check out Nigella’s recipe online, she writes: “Not only is this one of the easiest cakes to make, it happens – joyously – to be one of the most delicious. My household is totally addicted!”

Yum! Just check out all that Nutella and melted chocolate.

To be perfectly honest with you, this cake is NOT easy to make. You have to separate eggs and whisking the egg whites by hand, is open to disaster and exhaustion and after two attempts, we’re still fine tuning the cooking time. It also generates a lot of washing up.

However, there’s something about this cake that encourages me to persevere. It definitely improves after a night to set in the fridge and I love it served with fresh raspberries and cream and I needed a good coverage of roasted hazelnuts on top to break up the richness of the cake. They also provided that much sought after “crunch”.

So, I would consider this a special occasion cake for adults.While my kids do have a very sensitive palate and don’t like dark chocolate, they found the cake “too bitter” and really didn’t like it.

As I found Nigella’s icing too runny after two attempts, I have included an alternative recipe for dark chocolate ganache, which has worked for me in the past.

Nutella Cake

Ingredients

For the Cake

6 large eggs (separated)

1 pinch of salt

125 grams soft unsalted butter

400 grams nutella (1 large jar..NOT the jumbo size)

1 tablespoon frangelico (or rum or water)

100 grams ground hazelnuts

100 grams dark chocolate (melted)

Dark Chocolate Ganache

  • 250g dark cooking chocolate, chopped
  • 1/3 cup double cream

100 grams hazelnuts (peeled weight)

Raspberry Cream

Double Cream

1 punnet fresh raspberries

Sifted icing sugar to taste.

Directions

  1. Preheat the oven to 180ºC/gas mark 4/350ºF.
  2. Melt chocolate in the microwave, following packet instructions. Put aside to cool slightly.
  3. In a large bowl 1: whisk the egg whites and salt by hand until stiff but not dry. This means soft peaks but not until the foam starts to ball up. Put aside but you need to move quickly or the foam will liquefy.
  4. In Mix Master bowl 2: Beat the butter and Nutella together, and then add the Frangelico (or whatever you’re using), egg yolks and ground hazelnuts.
  5. Into Bowl 2: Fold in cooled, melted chocolate, then lighten the mixture with a large dollop of egg white, which you can beat in as roughly as you want.
  6. Bowl 2: Fold in remaining egg white a third at a time.
  7. Pour into a 23cm/9 inch round greased and lined springform tin and cook for 40 minutes or until the cake’s beginning to come away at the sides, then let cool on a rack. The cake will still be moist and wet inside, so do not overcook.
  8. Hazlenuts: Toast the hazelnuts either in a moderate oven or in a dry frying pan until the aroma wafts upwards and the nuts are golden-brown in parts: keep shaking the pan so that they don’t burn on one side and stay too pallid on others. Transfer to a plate and let cool. It’s imperative that they’re cold they go on the ganache while If your hazelnuts have skins on then after toasting in the frying pan transfer them to a slightly dampened tea towel and rub them while they are still warm to remove the skins.

To Make The Icing

  1. In a heavy-bottomed saucepan, add the cream, liqueur or water and chopped chocolate, and heat gently. Once the chocolate’s melted, take the pan off the heat and whisk until it reaches the right consistency to ice the top of the cake

Assembling The Cake

Unmould the cooled cake carefully, leaving it on the base as it will be too difficult to get such a damp cake off in one piece.

Ice the top of the cake with ganache, and cover with whole, toasted hazelnuts.

Slice cake into small portions, as it is quite rich and plate up with a generous scoop of raspberry cream.

Nigella’s Nutella Cake Revisited.

Nigella Lawson is a legend in the kitchen…the original “Domestic Goddess”.

Sadly, we mere mortals can only dream of finding a magic wand to convert our TV dinners, burnt offerings and tinned spaghetti on toast, into something out of the pages of her cookbooks.

Actually, I’m not a bad cook. Indeed, I am renowned for my pavlova, pancakes, Chocolate Chip Cookies and roast dinners. I’ve even successfully tackled Jamie Oliver’s Lasagna.  Moreover, I’ve also been teaching my kids to cook and I must admit, they’ve also been teaching me. I’m not that arrogant to believe that this teaching the kids stuff is a one-way street. I learn a lot too.

However, my trouble is with consistency, which more and more, I’m also attributing to NOT being in the Masterchef kitchen. I know you’re probably thinking that only a bad cook blames their appliances but you just tell me the last time you saw frozen eggs appear in the Masterchef kitchen? That’s right…NEVER!!!

Indeed, I had NEVER EVER seen frozen eggs before either. By the way, when I say frozen eggs, I’m not talking about the ingredients of an IVF stew. Rather, I’m taking about raw hen’s eggs. I store our eggs in the fridge and somehow the temperature control had been moved and we had frozen eggs. Not all of them, just a few. When I cracked them open, they’d turned into sloppy ice cubes and couldn’t be used..especially for Nigella’s cake, which  was built on fluffy egg white. After all, I could hardly separate the yolk from the white when they were fused together in an amorphous blog of ice. Moreover, freezing destroyed the cell membranes. So, even once the eggs finally defrosted, they were completely useless and looked in need of Viagra. I’ll say no more.

So, when I blame my cooking disasters on my appliances, I’m not just making excuses. It’s true!

Nigella Nutella Cake

“The Avalanche”…My first Attempt at Nigella”s Nutella Cake with Milk Chocolate Ganache.

Indeed, I think there’s some kind of appliance mutiny or rebellion going on in my kitchen and it’s spreading beyond the fridge. In what might seem an unlikely union of forces, the fridge is in cahoots with the oven.

You see, our oven has a faulty fan. That same fan makes your oven “fan-forced”, which makes quite a difference to the temperature of your oven and cooking times. Moreover, when the fan isn’t working, it also means that your food doesn’t cook evenly and horror of horrors, you might need to open the oven door and turn things around. If you know anything at all about baking cakes, especially sponges, you’ll know that opening the oven door is the kiss of death, which deflates your lofty sponge faster than a speeding bullet.

Just to complicate things further, our oven fan sometimes works and sometimes doesn’t and turns itself on and off during a bake.

Clearly, that oven is not my friend.

So, with a faulty oven and frozen eggs, for a second time I set out to replicate Nigella’s Nutella Cake. I don’t know whether you’d say I was brave or crazy because even before I’d melted the chocolate or whipped up the egg whites, there was trouble. While all those motivation types would tell me: “Never give up” BUT haven’t they heard of what’s meant to be? Or, more pertinently, that something “wasn’t meant to be”.

Quite frankly, I don’t think it’s being a a quitter or a loser when you decide to stop banging your head against a brick wall and try something else. Use a lateral approach. Everybody’s different. We’re not all meant to fit into the one, same pair of shoes.

Our son smothered his slice with Nutella. Found the cake too bitter. That was without the icing. Neither of our kids like dark chocolate.

The other problem I had with Nigella’s Nutella Cake is that my kids didn’t like it. My son slathered his slice in Nutella to mask the “bitter” taste and my daughter didn’t eat it. Even though the cake does have Nutella in it, which my kids absolutely adore, it also has dark chocolate which they can’t stand. Based on their comments, I’d say it’s more of an adult cake and even then, you only need small portions. It’s quite rich. I also felt it I needed raspberries and cream in addition to the generous covering of whole roasted hazlenuts found in Nigella’s original. She also recommends eating it with a glass of Frangelico and perhaps I should have tried that, but it was a busy night.

I hope half of this is still in the fridge. I’m feeling sick just looking at all that Nutella….even though I really love it!

So, at this stage, I don’t know whether I will make Nigella’s Nutella Cake again…even with my modifications. Most of my cooking is for our family and I can’t see the point of going to so much trouble to make a cake my kids don’t like when there are other cakes and desserts we all enjoy such as Apple Crumble with fresh custard.

Although the recipe says it’s easy, you’re separating eggs, whisking egg whites by hand, melting chocolate, using two separate bowls…that’s a lot of fiddling around and cleaning up for one cake, which I still haven’t been able to perfect on my second attempt. This time, the cake was good but the icing was still runny.

Still, my husband and I enjoyed it.

On a more positive note, I’ve just returned for a second piece 24 hours later and really loved the cake…with or without the cream and will be making it again. The cake much much more moist. The icing had set and it was a great flourless hazlenut chocolate cake. Something I really would be proud to serve for guests. With Masterchef gracing the airwaves, that’s quite an endorsement.

Perhaps, I am a Domestic Goddess after all and my spirit is soaring… on chocolate wings!
